Below are recipes I have gotten from visitors to my site who wrote in to share their favorite recipes! If you'd like to contribute, please email me with your recipe and I'll get it posted and give a link back to you.

QUICK AND EASY SUPPERS

Tatertot Casserole contributed by Melissa Williams
Ingredients:
One pound of COOKED ground hamburger meat, drained (I do mine in the Tupperware Stack Cooker and it drains itself, and is done in a few minutes, and is less messy)
one bag of frozen mixed vegetables
one can of cream of mushroom soup
one can of cheddar cheese soup
one bag of frozen tatertots

First, mix frozen veggies and soup in a bowl
In a lasagna sized baking pan, layer the ingredients:
1st layer: ground beef
2nd layer: soup and veggies
3rd layer: tatertots

Bake in oven until tatertots are done, you can go by the directions on the tatertots bag for that, or just preheat oven to 350 degrees and bake until tatertots are done. To eat it, we like to mush the tatertots in with the rest of the stuff, but that's just us.

This recipe is really good and really easy. It's a little like shepherd's pie. I got it from my grandma who showed it to my mom and aunt, and now I make it for my live-in boyfriend. When his friends come over they eat it all and there are no leftovers.
You can play with the recipe a lot, add an additional can of either kind of soup, try different soup flavors like maybe cheddar broccoli, use different kinds of frozen vegetables, or a different kind of frozen potato. If you decide to use a different potato on top, make sure it doesn't require frying it in oil, make sure it is the oven-baked kind. If green beans are in your frozen vegetables, they turn out nice and crisp, not soggy.
The name of this dish sounds funny, and to some people it may not look/sound all that appetizing, but once they try it they want more.

P'sghetti by Dawn Rhodes
Directions:
Boil a large pot of water. Take one 16 oz. package of uncooked spaghetti noodles, Break noodles into 2-3 sections and cook for regular time. Drain noodles and put into large bowl.

In a small bowl beat 2 eggs, 1/2 cup mozzarella cheese, and garlic salt...to taste. Pour beaten mixture in with cooked noodles and stir until well blended. Spread spaghetti mixture into 9x13 pan and bake at 325 degrees for 15 minutes (you are forming a noodle crust)

Take the pan out of the oven and top with 1 jar spaghetti sauce, pepperoni slices, and 2-8 oz. bags mozzarella cheese. Place back in the oven and continue baking for 25 minutes-or until cheese melts. Pizza and spaghetti all in one.

Tuna Buns by Karen
This recipe was handed down to Karen from her mom!
Ingredients:

1/4 lb Velveeta cheese, cubed
3 chopped hard boiled eggs
1 7 oz can of tuna, flaked
2 Tbs. green peppers, chopped
2 Tbs. onions, chopped
2 Tbs. green relish
1 Tbs. lemon juice
1/2 cup mayonnaise
1 dozen buns
Combine all the ingredients, except the buns. Mix well. Cut buns in half.

Spread a heaping tablespoon or two of tuna mixture on the bun. Bake covered at 250 degrees for 30 minutes.
Makes 10 tuna buns. Serves 5
Notes: The number of tuna buns depends upon the size of your bun. I usually use a smaller bun, but if you use a Kaiser roll, you'll end up with half the amount, but the same number of servings. I've used tortillas for Tuna Wraps. I've substituted celery, or zucchini for the green relish. Leftovers are good heated up or cold.

Celery Chicken by Lori
Ingredients:

1 can cream of celery soup
2 cups rice.....(uncooked...long cooking)
1 1/2 C. milk

Pour into baking pan and lay boneless skinless chicken breast (or whatever part you like best) on top.
Sprinkle with Lipton onion soup mix (1pkg) cover with foil bake @ 350* for 1 hour....Dinner is served.....and it's GOOD!

BAKED GOODS

AMARETTO BUNT CAKE by MICHELLE' FAIRMAN
Ingredients:

1 BOX WHITE CAKE MIX
1 BOX VANILLA Jell-O PUDDING
3 LG.. EGGS
1 CUP OIL
1/2 CUP orange juice
1/2 CUP AMARETTO

PREHEAT OVEN TO 350 and PUT ALL THE ABOVE IN A BOWL. MIX UNTIL ALL BLENDED AND SMOOTH PUT IN GREASED BUNT PAN.
COOK FOR 45 MINS.
NOTES:
YOU CAN ALSO DO THIS WITH CHOCOLATE CAKE MIX BUT USE CHOCOLATE PUDDING MIX IF YOU DO.

Caramel Apple Cookies by Karen F. Ingredients cookies:
1/2 cup margarine
1/4 cup brown sugar
1/4 cup powdered sugar
1/4 teaspoon salt
1 egg
1 teaspoon vanilla
2 cups flour
Toothpicks.

Ingredients coating:
1 lb. caramels, can be melted in microwave
2 tablespoons water
1 1/2 cup chopped nuts, walnuts or peanuts.

Mix the margarine, brown/powdered sugars, and salt together until creamy.  Beat in 1 egg, 1 teaspoon vanilla and gradually add in the flour.

Form the above into 1 inch balls and bake at 350 degrees for 10-12 minutes.   When done take out and immediately place a toothpick into each cookie.  Dip in the caramel and nuts and place on foil until cooled.  Can be placed in mini papers for a cute look.

Pumpkin Pecan Cake by Karen F.
Ingredients cake:
1 box Duncan Hines Spice Cake Mix
1 16 oz. can Libbys Pumpkin
1/4 cup butter or margarine (softened)
4 eggs

Ingredients filling/topping:
2/3 cup butter or margarine
1 3 oz. cream cheese
3 cups powdered sugar
2 teaspoons vanilla
1/4 lb. caramels

Ingredients crust:
2 cups crushed vanilla wafers (about 50)
1 cup chopped pecans
3/4 cup butter or margarine

In mixing bowl beat, vanilla wafers, pecans and butter until crumbly.  Press into 3 greased and floured 9 inch cake pans.
In another mixing bowl beat, cake mix, pumpkin, butter and eggs for 3 minutes.  spread evenly over crust in each pan.  Bake for 30 minutes (according to box directions) or until toothpick comes out clean.
Remove from oven and cool completely. Mix together the filling/topping ingredients, frost between layers, sides and top.  Drizzle with caramel and decorate with whole pecans.

APPETIZERS

Seafood Nachos by Kelly
Ingredients:
1 lg. bag of large sized tortilla chips (i.e. Tostitos, etc)
1 lb. imitation crab meat
1-2 lb. monterey jack cheese shredded (depends how cheesy you want them)
Small can of black olives (optional)
Sour cream and/or salsa for dipping

This makes several batches!* Place crab meat in a food processor and process until finely chopped. Or shred or chop into small thin pieces if you don't have a food processor. Line a large cookie sheet or baking pan with a single layer of tortilla chips, top with some crab meat, cheese, olives and bake in 350* oven for about 5-10 mins. or until cheese is melted. Dip in salsa or sour cream and enjoy!

Home Made Applesauce by Babs
Ingredients:

6 good size apples.. washed cut in the sections
Add 3 cups water and 1/2 cup sugar, cover bring to boil, then simmer till they mush.
With a potato masher smush them in the pot, then pour in to strainer, over large bowl, keep mixing till all you have left in the strainer is the skins and cores. The apple mash is great for the animals outside, This is so easy... and your house smells wonderful..

SOUPS

Slow Cooker Vegetable Soup Contributed by Kris
Ham bone (with some ham still attached)
2 lbs stew beef cut in small pieces and browned (can add more or less depending on taste,
or delete entirely if you just want vegetable soup)
1 lg can crushed tomatoes
1 can water
2 cans low fat chicken broth
2 large potatoes cut in small pieces
1 package seasoning blend (thawed)
1 tsp pepper
1/2 tsp salt
Add all to large Crockpot and cook on low for 7 hrs
THEN ADD 2 packages frozen gumbo style vegetables (I like okra so I used this instread of just soup vegetables)
1/2 cup barley
Cook an additional hour.

Kris' Baked Potato Soup contributed by Kris
4 lg baking potatoes
2/3 cup margarine
2/3 cup all purpose flour
6 cups milk
3/4 tsp salt
1/2 tsp pepper
4 green onions, chopped and divided
12 slices bacon cooked , crumbled and divided
1 1/4 cup cheddar cheese (5 oz pre-shredded)
1 - 8 oz carton of sour cream
Cook baking potatoes and let cool cut in half and scoup out pulp (no large chunks)
Melt butter in heavy saucepan over low heat
Add flour (stir contantly) Gradually adding milk
Cook at medium heat (Stirring constantly)
VERY IMPORTANT!!! Until mixture thickens and becomes bubbly
Add potato pulp, Salt and pepper, 2 tsp of onion, 1/2 cup bacon and 1 Cup cheese
Cook until thoroughly heated
Stir in sour cream
Add extra milk as necessary until desired thickness is achieved
Put remaining bacon, onion and cheese on top
