Summer Grilling

Everyone enjoys the summer and the wonderful flavors and smells of the bar-b-que. Whether you are planning a 4th of July get together or just having friends over for some grilled goodies, this page is just for you!

Sauces

Bar-b-Que Sauce
This sauce can be used year round from oven to grill, try it not only on chicken, but spareribs, chops and even basted on your hamburgers while grilling!
Ingredients : 1/2 cup finely chopped onion; 1 cup water; 1 cup ketchup ; 2 tablespoons vinegar; 2 tablespoons lemon juice; 2 tablespoons worcestershire sauce ; 2 tablespoons brown sugar ; 1 teaspoon dry mustard ; 1 teaspoon salt ; 1/4 teaspoon pepper.
Directions: Simmer, covered, for 20 minutes.


Steak Sauce
This sauce can also be used year-round, but tastes best on a grilled steak!
Ingredients:
1 1/2 to 2 tablespoons "cracked" peppercorns; 1 cup beef boullion; 2 tablespoons butter; 1/4 cup finely chopped onions; 3/4 cup finely chopped mushrooms; 2 tablespoons flour; 1/4 cup Whiskey (any brand).
Directions:
In a small saucepan over medium high heat, saute' the onion and mushrooms in the 2 tablespoons of butter, (about 3 minutes); add the 2 tablespoons of flour and mix until smooth, add the 1/4 cup whiskey and stir until the mixture is smooth, NOTE keep stirring as the whiskey dissolves due to the heat which is what you want it to do , about 2-3 minutes depending on how high the heat; add in the broth and continue to stir until the sauce has thickened. Pour over your grilled steak.

Main Dishes

Camp Out Tin Foil Meal
Ingredients:
1 lb. hamburger
1 small onion, sliced
Sliced green pepper, mushrooms (these are optional)
1 medium potatoe, sliced
Carrot slices
Tin foil

Directions:
Shape the hamburger into 1 inch thick patties, season with salt and pepper to taste.
Tear off a piece of tin foil that's large enough to hold the burger and extra ingredients. The sheet you use should be large enough so above can be covered and enclosed "in" the foil. *Hint: Reynolds Wrap has bags which work wonderful for this recipe!

On top of the patty layer the ingredients and close the foil tight. Place on your grill over medium heat (off to the side if grill is hot), for approximately 20 minutes. Open packet and everything should be tender and cooked!
You can use any type of ingredients you like, the above is basically a guide.

Grilled Hamburgers
Ingredients:
1 pound hamburger; 2 tablespoons worcestershire sauce; *salt, *pepper and *garlic powder to taste. Keep in mind that the worcestershire sauce has salt and gives it a salty flavor!

Directions:
Mix the hamburger and worcestershire sauce well in a medium mixing bowl; (*you can add salt, pepper and garlic powder to this if you choose by using 1/4 teaspoon each of the salt and pepper and 1/2 teaspoon of the garlic powder); cover and refrigerate for 1 hour. Shape into patties and grill. If you did not add the seasonings you can do so while grilling!

Grilled and Simmered Brats
Ingredients : Bratwurst (however many you want to make); 1 onion, sliced or chopped ; 1 quart beer to equal part water
Directions:
In large pot bring brats, water, beer and onion to boil, turn down, simmer for ½ an hour.
Grill should be prepared so ready when brats have finished simmering
Place cooked brats on grill to brown, place brats back in pot with the liquid (beer,onion,water),
continuing simmering on stove until you are ready to eat.
Note :The longer you let the brats simmer in the liquid the better they taste !

Vegetables

Corn on the Cob (for the Grill)
Directions:
Slightly unhusk the cobs and remove the silk. Soak the cobs (repairing the husk) in water for 30 minutes or more. Grill on hot coals, turning occasionally, dip in melted butter.

Grilled Onion Slices
Note:We usually use foil for this on the grill
Slice onions (as many as you want) into about 1 inch thick slices. Place on grill and brush lightly with olive oil. Serve

Potatoes
Clean the amount of potatoes you need. Poke several holes into potatoes with fork, wrap with foil or save foil from margarine sticks (gives it a buttery flavor). Cook on grill off to sides until tender when pierced with fork

Dessert

Popsicles
Ingredients:
1 cup any type of fruit
6 oz. frozen lemonaide
2 cups water
Tin foil
Dixie Cups
Craft Sticks
Directions:
Blend the above ingredients in a blender until well mixed. Pour mixture into dixie cups. Place a piece of tin foil over the opening of the dixie cup and mixture, make a small slit in the top and put in your popsicle (craft) stick. The foil will hold the stick in place. Place in freezer, freeze for several hours and enjoy!

Summer Dessert
Ingredients:
1 package of "Jiffy" cake mix (yellow or white); 1 8 oz. pkg. of cream cheese, softened; 2 cups milk; 1 small pkg. instant vanilla pudding; 1 large can crushed pineapple (drained); 1 container cool whip; chopped nuts if desired.
Directions:
In a 9X13 inch baking pan, prepare cake mix as directed and bake for 15 minutes at 350 degrees, cool.
Filling: In a mixing bowl combine the instant pudding and mix with the cream cheese, add the milk gradually to blend, until thickened. Spread over the cake. Layer the crushed (and drained) pineapple over this. Spread over top of pineapple the cool whip, chopped nuts can be sprinkled over top if desired. Refrigerate for 2 hours and serve.

Summer Drinks

Lemonade
Ingredients:
4 lemons; 3/4 sugar; 4 cups cold water.
Directions:
Cut lemons into slices and press juice out with the back of a spoon (in metal bowl) or in a juicer. Pour juice into small pitcher, add water and sugar stir and serve. Add additional lemon slices if desired!

Sangria
Ingredients:
2 cups dry red wine, cold; 2 cups orange juice; 2 tablespoons lime juice; 1/4 cup sugar; 1 cup club soda.
Directions:
In a small pitcher mix all ingredients until dissolved, chill and serve! Great summer drink.
