BREAKFAST RECIPES
Scrambled Eggs
Makes 8 Servings
What you need: Skillet, medium size
mixing bowl, measuring spoons, hot
pads.
Ingredients:
1 dozen eggs, 1/2 teaspoon salt; 1/8
teaspoon pepper, 3/4 cup milk.
Mix the eggs, salt, pepper and milk in
the mixing bowl, making sure the
mixture is well beaten and all
ingredients are mixed, 3 tablespoons
butter or margarine.
Over medium heat, melt the butter in
the skillet, pour in the egg mixture
and stir occasionally until the eggs
are hardened and fully cooked. Serve
with toast, butter and jam.
NOTE: By adding 2/3 cup of
shredded American Cheese to the egg
mixture, you can make cheesy eggs
that taste even better.
Poached Eggs
Makes 6 Servings.
What you need: Skillet, hot pads, 2
teaspoons salt OR vinegar.
In the skillet add enough water so the
bottom of skillet is covered, you
should have about 1 1/2 inches of
water. Add the salt or vinegar.
Simmer the water on medium heat
until water starts to bubble. Crack
the eggs into the simmering water
being careful not to break the yolks.
Simmer 3-5 minutes or until whites
are firm and a film covers the yolk.
Serve over toast or english muffins.
French Toast
Makes 4 Servings.
What you need: Skillet, hot pads,
mixing bowl, measuring cup, measuring
spoons, 1/4 teaspoon salt, 3/4 cup
milk, 3 eggs, 2 tablespoons butter or
margarine.
In the mixing bowl add the eggs, salt
milk, mix well. On medium heat melt
the butter in the skillet. When
butter is melted dip the bread into
the egg mixture and coat both sides.
Place bread slices in the skillet, cook
bread on each side approximately 2
minutes.
Serve with your favorite syrup!
LUNCH
Grilled Cheese
Makes 1 serving.
What you need: Skillet, hot pads,
butter or margarine, 2 slices of white
bread, 1 slice American Cheese.
Butter 1 side of each slice of bread,
on the unbuttered side place the slice
of cheese, placing the other slice of
bread in the middle. In a medium low
skillet, cook each side of the
sandwich about 2 minutes, turning
until lightly browned and cheese is
melted in center.
You can add a slice of ham before
cooking to make a grilled ham and
cheese sandwich.
DINNER
BAKED CHICKEN
Makes 4 Servings.
What you need: 1 package (approx. 2 lbs.) of cut chicken pieces; 1 cup all purpose flour; 1/2 teaspoon salt; 1/4 teaspoon pepper; 1/2 teaspoon Season Salt or Poultry Season; 2 tablespoons margarine or butter; 13X9 baking pan; brown paper bag or plastic bag to mix and shake ingredients, oven mitts.
Pre-heat oven to 400 degrees. In the plastic or brown bag put the flour, salt, pepper, season salt or poultry seasonings, shake to mix.
When the oven has pre-heated put butter/margarine, (I recommend to spray the pan with cooking spray if you have), in the baking pan and place in oven just until butter is melted.
Rinse chicken pieces under cold water, shake off excess moisture, then put in bag and shake until coated. Place coated chicken (skin side down) in the baking pan with the melted butter. Repeat above until all pieces are in the baking pan. Place in oven.
Bake 30 minutes, remove the pan from oven and turn chicken pieces over. Place back into the oven and cook an additional 30-35 minutes. Remove from oven and serve with your favorite side dishes.
SLOPPY JOE HAMBURGERS
Makes 8 Sandwiches.
What you need: Chopping board,
paring knife, measuring cup, measuring
spoons, skillet, hot pads.
Ingredients:
3 tablespoons cooking oil; 1 small
onion, chopped; 1/2 green pepper,
chopped; 1 pound hamburger; 1 cup
ketchup; 1 teaspoon salt; 1/4
teaspoon pepper; 8 hamburger buns.
Chop the onion and green pepper in
small pieces; heat oil over medium heat and add
the onion and green pepper. Cook
about 5 minutes, don't let them get
brown.
Add the hamburger and continue to
cook until pink in hamburger is gone. Stir occasionally to bring the pink
meat up from bottom of skillet until
all meat is browned.
Add the ketchup, salt, pepper. Cook slowly until flavors and
ingredients are blended.
Simmer for about 10 minutes, be
sure to stir occasionally. Serve on hamburger buns.
Spaghetti
Makes 4 Servings.
What you need: Saucepan, measuring
spoons, hot pads, 1 tablespoon butter
or margarine, 1-2 ounce can of sliced
mushrooms, 1 ½ teaspoons sugar, 1-
15 ounce can tomato sauce, 1
teaspoon dried, crushed oregano, 6
ounces (or 1 small package) of cooked
spaghetti noodles.
In the saucepan add the butter or
margarine, mushrooms, sugar, tomato
sauce, sugar and oregano. Over low
heat, stirring occasionally, bring the
mixture to a boil. Lower the heat to
medium low and simmer, uncovered,
for 10 minutes. Serve over your
spaghetti noodles.
Extras
Easy Eggnog
Makes 1 cup.
What you need: 1 cup milk, 2
tablespoons sugar, 1/2 teaspoon vanilla,
1 egg, drinking cup.
In the cup place the above
ingredients, mix well, drink!
Sugar Jumbles
Makes 2-3 dozen cookies.
What you need: Medium mixing bowl,
measuring cups, measuring spoons,
electric mixer or mixing spoon, cookie
baking sheet, flour sifter.
Ingredients: 1/2 cup soft butter or
margarine, 1/2 cup sugar, 1 egg, 1
teaspoon vanilla, 1 cup and 2
tablespoons of sifted flour, 1/4
teaspoon baking soda, 1/2 teaspoon
salt.
In the bowl mix the butter, or
margarine, sugar, egg and vanilla until
fluffy and creamy. Sift the flour,
baking soda and salt together and add
this mixture to the sugar mixture,
mixing thoroughly.
Place 1 teaspoonful of the mixture on
a lightly greased cookie sheet, place
drops about 2 inches apart.
Bake in 375 degree oven for 8 to 10
minutes, until lightly browned. Let
cool, remove from baking sheet and
serve
