Melissa's Cream Cheese Mashed
Ingredients:
4 lbs. baking potatoes(peeled and quartered)
1 8 oz. package cream cheese
1 8 oz. container sour cream
1/2 cup butter or margarine
1 1/2 tsp. salt
1/2 tsp. pepper
melted butter & chopped fresh parsley (optional)

Directions:
In a large pot over high heat combine potatoes with enough water to cover. Bring to boil. Reduce heat to medium.
Simmer until potatoes are tender, about 25 minutes. Drain; return to pot. Add cream cheese,
sour cream, salt and pepper. Mash until smooth. If desired, serve drizzled with butter and sprinkled with parsley.
*tip: You can use low or nonfat sour cream and cream cheese to decrease the fat content and still keep the recipe's flavor.

Best Ever Salad
Ingredients:
1 head of lettuce, washed, drained.
1 tomatoe, sliced and/or diced
1 cucumber, peeled and sliced
1 or 2 Hard boiled eggs, peeled and sliced
1 small Burmuda onion (red onion), sliced
Green and Black olives, drained and sliced
1/2 can Artichoke Hearts, drained, sliced
1/2 can Hearts of Palm, drained, sliced
Parmesan cheese.

Directions:
In a large salad bowl, tear lettuce into pieces, add the remaining ingredients and toss. Parmesan
cheese gives this salad extra flavor, use as much or as little as you desire. Serve with your favorite
salad dressing.

German Potato Salad
Ingredients:
1/2 lb. Bacon, cut into small pieces, cooked, reserve the grease
1/2 finely chopped onions
2 tablespoons butter
3 tablespoons flour
3/4 cups vinegar
3/4 cups water
1 cup sugar
1 teaspoon dry mustard
3 lbs. cleaned, peeled and cooked, diced potatoes. Put the potatoes into a serving bowl.

Directions:
In the skillet with the reserved grease combine the onions, flour, water, vinegar and sugar, medium heat until it comes to a boil, stirring often, add the cooked bacon.
Pour over the potatoes, toss lightly.

Quick Potatoes
Ingredients:
5-6 clean, diced Idaho potatoes
1/2 package chopped fresh mushrooms
1/2 cup finely chopped onion
3/4 stick of butter or margarine

Directions:
In a medium sized, micro-waveable save casserole dish add the diced potatoes, mushrooms, onions and butter, cover.
Microwave on high for about 12 minutes or until potatoes are tender. *You can also grill these potatoes by placing ingredients in heavy duty aluminum foil and grilling them, turning over package, for about 1/2 hour.

Tomato Salad
Ingredients:
1-1/2 cups Italian Dressing
2 plum tomatoes sliced and quartered
1/4 cup diced onion
1 cucumber sliced.

Directions:
In a medium sized bowl place the tomatoes, onions and cucumber, pour dressing over these ingredients, toss lightly.
Cover and refrigerate overnight. *Serving size depends on you.

Cucumber Salad
Ingredients:
3 Cucumbers, peeled and sliced
1/2 onion cut into thin slices
4 ounces Sour Cream
*salt, pepper to taste
1 to 1/2 tablespoons sugar

Directions:
In a medium bowl place your cucumber slices, salt lightly, let sit for about 15-20 minutes, drain.
Add onion, sour cream, pepper, mix well. Add sugar, start by adding 1/2 tablespoon, add sugar to taste.
